Over at the Nerd Fitness community, there are challenges users can undertake.
As a fitness noob, I fell into the ‘adventurer’ class so I go there to find challenges.
The first official challenge that I am attempting is rather simple. Find, or create, a recipe that focuses on vegetable as the main ingredient. Hmmm… Clearly salsa qualifies, but since I already found the best salsa EVER (outside of our local Mexican restaurant), it isn’t new.
But cauliflower as a replacement for potato is new to us. Especially this twice baked cauliflower dish that looks yummy. No, it is not 100% Paleo compliant, what with the cheese, but I’m still allowed dairy at this point in my transition to Paleo.
Seriously. It looks to die for. I’ll let you know. We’re having it tomorrow night!
